PINAATTIKEITTO - SPINACH SOUP

serves 4

50 g butter or margarine
4 tbsp wheat flour
1 l milk
200 g frozen spinach
sprinkle of white pepper
salt

For serving:
4 boiled eggs



1. Melt the butter in a pot, add flour while mixing all the time. Let boil but do not let it turn brown. 
2. Add milk gradually, mixing all the time. Let boil (still remember to mix!). 
3. Add frozen spinach, white pepper and salt. Let simmer under lid for 10 minutes, mix every now and then.
4. Serve with halved boiled eggs.

PINAATTIKEITTO
4 hengelle

50 g voita tai margariinia
4 rkl vehnäjauhoja
1 l maitoa
200 g pakastepinaattia
hieman valkopippuria
suolaa

Tarjoiluun:
4 keitettyä kananmunaa

1. Sulata voi kattilassa, lisää jauhot koko ajan sekoittaen. Varo ettei seos ruskistu. 
2. Lisää maito vähitellen kaataen, koko ajan sekoittaen. Kiehauta koko ajan sekoittaen.
3. Lisää jäinen pinaatti, valkopippuri ja suola. Anna hautua kannen alla noin 10 minuuttia.

4. Tarjoile keitettyjen, halkaistujen kananmunien kanssa.

RUISLEIPÄ – RYE BREAD

Starter:
2 slices of Finnish thin crispbread or good rye bread OR 1 tbsp sour rye bread dough
½ l water
½ l rye flour

1. Mix thin crisp bread crumbble to water and flour.
2. Cover the bowl with moist kitchen towel, or clingfilm with couple of air holes.
3. Let rise in warm place at least till next day, until dough is a bit bubbly and smells sour.

Rye bread:
½ l water
½ tsp dry yeast
½ tbsp salt
10–13 dl rye flour 

4. Mix yeast to 1 dl rye flour. Warm water to 42–50 degrees Celsius. Mix. 

5. Add salt, starter and so much flour that dough is firm but soft, i needed 12 dl. This depends of the flour. Mix until even (it will remain very sticky!).

6. Cover with a kitchen towel. Place in a warm place until dough has doubled in size, this will take longer than when baking with wheat flour. if nothing still happens dough has been in too cool place.

7. Seperate 1–2 tbsp from the dough, place in a plastic bag and in a freezer for the net time you are going to do rye bread. Mix it in a small amount of water when needed.

8. Make 2 ball shaped breads on well floured surface, they will come down a bit when rising (you read right). Cover with a kitchen towel and let rise in a warm place.

9. Push a couple of holes with fork or a thin stick. Bake in 200 degree Celsius, on low level for 60–70 minutes.

RUISLEIPÄ

Juuri:
2 viipaletta hapankorppua TAI 1 rkl hapanruisleipätaikinaa
½ l vettä
½ l ruisjauhoja

1. Sekoita murennetut hapankorput/taikina veteen ja ruisjauhoon.
2. Peitä kulho kostealla talouspyyhkeellä tai kelmulla johon on pistetty sormella pari reikää.
3. Anna seistä lämpimässä, esimerkiksi hellareunalla, vähintään vuorokausi, tai kunnes taikinajuuri kuplii ja on huokoista.

Ruislimppu:
½ l vettä
½ tl kuivahiivaa
½ rkl suolaa
10–13 dl ruisjauhoja 

4. Sekoita hiiva 1 dl ruisjauhoja. Lämmitä vesi 42–50-asteiseksi. Sekota hiivaseos veteen. 
5. Lisää suola ja niin paljon jauhoja että taikina pysyy koossa mutta on vielä pehmeää. jauhojen määrä riippuu niiden laadusta. Alusta taikina tasaiseksi. Reikäleipään ja sämpylöihin taikina jätetään pehmeämmäksi kuin limppuun.
6. Peitä kulho keittiöliinalla, aseta lämpimään paikkaan kohoamaan, kunnes taikina kaksinkertainen. 
7. Ota pari ruokalusikallista talteen seuraavaa leivontakertaa varten. Pakasta pala ja liuota se pieneen vesimäärään, kun käytät sitä seuraavan kerran.
8. Leivo taikinasta kaksi pallonmallista limppua, ne madaltuvat kohotessa. Peitä liinalla ja anna kohota lämpimässä paikassa.

9. Painele leipien pintaa haarukalla. Paista 200 asteessa, uunin alatasolla noin 60–70 minuuttia.

TEELEIVÄT – SCONES

I  admit, these are more British than Finnish but we use to do these quite often at home. I love buttermilk and here in the Middle East you can replace with local sour milk drink called laban.

450 g wheat flour
1 tsp bicarbonate soda
½–1 tsp salt
Approx. 400 ml laban/buttermilk/sour milk
(2 tbsp fresh herbs or 1 tbsp dried herbs OR/AND 1 dl grated cheese)








1. Mix together all dry ingredients, also herbs or/and cheese if you choose to use them. Make a well in the middle. If you use extras, use less salt.

2. Add most of the laban/buttermilk/sour milk into the well. Mix in flour from the sides of the bowl, add more milk gradually until dough is soft, but not too sticky.

3. Turn the dough onto floured surface, knead until it is approximately 2 cm thick. 

4. Cut into squares or rounds. Place on baking tray covered with baking parchement.

5. Bake in a 225 degree Celsius oven for 15–20 minutes until golden brown. 

6. Serve hot with butter.


TEELEIVÄT

450 g jauhoja
1 tl soodaa
½–1 tl suolaa
n. 400 ml labania/piimää
(2 rkl tuoreita yrttejä tai 1 rkl kuivattuja yrttejä TAI/JA 1 dl juustoraastetta)

1. Sekoita kuivat aineet keskenään, myös yrtit ja juusto, jos käytät niitä. Käytä vähemmän suolaa, jos lisää lisukkeet. 

2. Tee keskelle kolo. Lisää suurin osa nesteestä siihen. Sekoita reinoilta jauhot nesteeseen. Lisää nestettä, kunnes taikina on pehmeää muttei liian tarttuvaa.

3. Jauhota leivonta-alusta, kaada taikina sille. Taputtele takina noin kahden sentin paksuiseksi levyksi. 

4. Leikkaa pyöreitä tai nelikulmaisia teeleipiä. Asettele leivät leivnpapreilla päällystetylle pellille.

5. Paista 225 C -asteisessa uunissa 15–20 minuuttia. 


6. Tarjoa lämpimänä voin kanssa.

LASKIAINEN – SHROVE TUESDAY

Shrove Tuesday aka Pancake Day (laskiainen in Finnish, Mardi Gras in French) is a spring celebration that draws its origin from centuries old Christian and pagan traditions. In Catholic countries it precedes fasting. In Finland it is celebrated with downhill or ice sledging and meals with hernekeitto (green pea soup with ham) and laskiaispulla (sweet coffee bread filled with strawberry jam or almond paste and whipped cream). 
Traditionally food should contain loads of fat, since it was believed to predict good luck with livestock (especially production of milk and pork). Downhill sledging was believed to affect length of flax (plant you make linen of).

HERNEKEITTO – SPLIT PEA SOUP WITH HAM

One of the great classics which we get use to eating at home, school, army, workplaces and big happenings. Usually eaten on Thursdays and accompanied with oven baked pancake as a dessert.


500 g dried peas
3 l water
1 tsp marjoram
1 tsp grounded black pepper 
salt
1 large onion
1 clove of garlic
500 g smoked ham or pork belly 
mustard





1. Rinse the peas in cold water. Let them soak in two liters of cold water for at least 10 hours. Remove the foam.

2. Cook peas in the soaking water for 1 hour. Add marjoram, pepper and salt.

3. Chop the onion and garlic and cut the pork into small pieces. Add to the soup. 

4. Add the rest of the water. Let simmer until peas are soft (for at least 4 hours or until peas are soft, usually longer the better, we do it for 10 h) on low temperature. Add mustard to the taste when serving.

5. Serve with sour dough rye bread.

 

HERNEKEITTO

500 g kuivattuja herneitä
3 l vettä
1 tl meiramia
1 tl rouhittua mustapippuria
1 tl suolaa
1 iso sipuli
1 valkosipulinkynsi
500 g kinkkua/palvikinkkua/siankylkeä
sinappia

1. Huuhdo herneet kylmässä vedessä. Laita ne isoon kattilaan likoamaan noin kahteen litraan vettä. Anna liota vähintään kymmenen tuntia. Poista pinnalle kertynyt vaahto.
2. Keitä herneet liotusvedessä noin tunti. Lisää meirami, pippuri ja suola.
3. Silpo sipuli, valkosipuli ja liha pieneksi. Lisää herneiden joukkoon.
4. Lisää keittoon loput vedet. Keitä kunnes herneet pehmenneet, vähintään neljä tuntia matalalla lämmöllä. 
5. Lisää sinappia maun mukaan tarjoiltaessa.

LASKIAISPULLAT – SHROVE TUESDAY SWEET BUN

Traditionally mothers baked pulla on Fridays, and lovely smell of cardamon filled the houses. Fresh bakings were enjoyed with glass of milk or coffee. Around Shrove Tuesday we fill these buns with strawberry jam or almond paste and whipped cream. Yam!


5 dl milk (OR water)
22 g dry (instant) yeast OR 50 g fresh yeast
2 eggs
2 dl sugar
1 tbsp ground cardamon
1–1½  tsp salt
approx 1½ l all-purpose wheat flour (about 1,1 kg)
200 g butter OR 1½ dl vegetable oil

For finishing: 
1 egg
strawberry jam or almond paste
whipped cream
icing sugar

1. Activate the yeast:
a) If using fresh yeast, warm milk on the stowe to hand temperature. Crush yeast to it and with the help of your fingers, dissolve into the warm liquid. 
b) If useing dry yeast, warm milk to 42–50 degrees. Mix both bags of yeast to a 1–2 dl of wheat flour. Add to the milk.

2. Add eggs, sugar, cardamon and salt.

3. Gradually add flour kneading the dough all the time with your hand until it is elastic, smooth and not sticking to bowls edges. Add melted butter or oil towards the end of kneading. Don’t make the dough too hard since it makes pullas dry. You might not need all the flour mentioned in the ingredients!

 4. Turn off you AC, as it effects rising. Cover the bowl with kitchen towel and place it in a warm draft free place for example microwave oven or kitchen sink in which you have some hot water. This helps the rising. Let the dough rise until almost twice in size.

5. Flour you baking surface. Make small buns, roll dough into 5 cm diameter balls. 

6. Place buns  on baking tray covered with baking parchment. Cover with a kitchen towel and let rise around 20 minutes.

7. Brush with beaten egg.

8. Bake buns at 225 degrees Celsius for 15 minutes or until golden brown. 

9. Let cool. Cut a cap off from each bun, fill with jam and whipped cream. Sprinkle with icing sugar.









PULLATAIKINA

5 dl maitoa (TAI vettä)
17 g kuivahiivaa TAI 50 g tuorehiivaa
2 kananmunaa
2 dl sokeria
1 rkl jauhettua kardemummaa
1–1½  tl suolaa
noin 1½ l vehnäjauhoja (noin 1,1 kg)
200 g margariinia TAI 1 ½ dl rypsiöljyä

Viimeistelyyn:
1 kananmuna
mansikkahilloa tai mantelitahnaa
kermavaahtoa

1. Aktivoi hiiva:
a) Jos käytät tuoretta hiivaa, lämmitä maito kädenlämpöiseksi ja murenna hiiva nesteeseen. 
b) Jos käytät kuivahiivaa, lämmitä neste 42–50-asteiseksi. Sekoita hiivajauhe 1–2 desiin jauhoa ja sekoita nesteeseen. 
2. Lisää joukkoon kananmunat, sokeri, kardemumma ja suola, sekä rusinat halutessasi. 
3. Koko ajan kädellä vaivaten alusta taikina kimmoisaksi lisäämällä vehnäjauhoja vähitellen. Alustamisen loppuvaiheessa lisää sulatettu rasva tai öljy. Vaivaa taikinaa, kunnes se irtoaa taikinakulhon reunoista. Saatat tarvita hieman enemmän tai vähemmän jauhoja.
4. Kohota taikinaa lämpimässä, vedottomassa paikassa, esimerkiksi mikroaaltouunissa tai aseta se tiskialtaaseen, jonka pohjalla on lämmintä vettä. Anna kohota kunnes taikina on paisunut lähes kaksinkertaiseksi.
5. Leivo halaumasi mallisia pullia, asettele ne leivinpaperilla peitetylle uunipellille ja peitä keittiöliinalla. Anna kohota noin 20 minuuttia.
6. Voitele pullat kananmunalla.  
7. Paista  leivonnaisia 225 asteessa uunin keskitasossa noin 15 minuuttia tai kunnes pullan pinta ja pohja ovat kauniin vaaleanruskeat. 
8. Anna jäähtyä. Leikkaa pullalle hattu, laita väliin hilloa ja kermavaahtoa. Sirottele päälle tomusokeria.

KORVAPUUSTIT – FINNISH CINNAMON ROLLS



5 dl milk (OR water)

1–1½  tsp salt
approx 1½ l all-purpose wheat flour (about 1,1 kg)
200 g butter OR 1½ dl vegetable oil

For filling:
butter
sugar
cinnamon

For finishing: 
1 egg
granulated sugar

1. Activate the yeast:
a) If using fresh yeast, warm milk on the stowe to hand temperature. Crush yeast to it and with the help of your fingers dissolve into the warm liquid. 
b) If useing dry yeast, warm milk to 42 degrees. Mix both bags of yeast to a 1–2 dl of wheat flour. Add to the milk.

2. Add eggs, sugar, cardamon and salt.

3. Gradually add flour kneading the dough all the time with your hand until it is elastic, smooth and not sticking to bowls edges. Add melted butter or oil towards the end of kneading. 5. Flour you baking surface. Roll out of your batter 30 x 40 cm sheets, about ½ cm in thickness. Spread room temperature butter on it, sprinkle with sugar and cinnamon. Roll like swiss roll. 
a) Cut into 3 cm pieces. Press with your index fingers in the middle of each piece forming a ear shaped cinnamon roll.
b) Cut into 2 cm pieces. Place them into baking cups cutting edge up.

6. Place rolls on a baking tray covered with baking parchment. Cover with a kitchen towel and let rise around 20 minutes.

7. Brush with beaten egg and sprinkle with sugar.

8. Bake at 225 degrees Celsius for 15 minutes or until golden brown.

b) Jos käytät kuivahiivaa, lämmitä neste 42–50-asteiseksi. Sekoita hiivajauhe 1–2 desiin jauhoa ja sekoita nesteeseen. 

2. Lisää joukkoon kananmunat, sokeri, kardemumma ja suola, sekä rusinat halutessasi. 

3. Koko ajan kädellä vaivaten alusta taikina kimmoisaksi lisäämällä vehnäjauhoja vähitellen. Alustamisen loppuvaiheessa lisää sulatettu rasva tai öljy. Vaivaa taikinaa, kunnes se irtoaa taikinakulhon reunoista. Saatat tarvita hieman enemmän tai vähemmän jauhoja.

4. Kohota taikinaa lämpimässä, vedottomassa paikassa, esimerkiksi mikroaaltouunissa tai aseta se tiskialtaaseen, jonka pohjalla on lämmintä vettä. Anna kohota kunnes taikina on paisunut lähes kaksinkertaiseksi.

5. Kauli taikinasta 30 x 40 cm levyjä. Voitele ne huoneenlämpöisellä voilla, ripottele päälle sokeria ja kanelia. Kieritä rullaksi. 
a) Leikkaa noin 3 cm paloja, paina kutakin keskeltä etusormilla, jotta saa "korvat" esiin. 
b) Leikkaa 2 cm paloja, asettele ne leikkauspinta ylöspäin muffinivuokiin (kuvassa). 

6. Asettele ne leivinpaperilla peitetylle uunipellille ja peitä keittiöliinalla. Anna kohota noin 20 minuuttia.

7. Voitele pullat kananmunalla ja koristele raesokerilla, sokerilla ja voilla, mantelilastuilla tai murskatuilla pähkinöillä. 

8. Paista puusteja 225 asteessa uunin keskitasossa noin 15 minuuttia tai kunnes pullan pinta ja pohja ovat kauniin vaaleanruskeat.
